A Day in the Life of Multiple Sclerosis 110621

Today is National Nachos Day. I suppose it is somewhat fitting considering that today is filled with college football and Nachos is the snack favored at sporting events across the country. In their purest form, nachos are tortilla chips covered in nacho cheese, queso or other melted cheese and served with salsa.

But who wants nachos in their purest form? Not me.

However, I don’t care for the mile-high pile of chips covered in cheese with everything sprinkled all about or ‘football nachos.’ I rather prefer a little more order to my ‘nacho chaos’ - much like many of the restaurants serve: one single, slightly larger chip with cheese, chicken and then I cover it with whatever I prefer; sour cream, lettuce, sour cream, tomato, salsa, guacamole, sour cream, jalapeƱo and just a dash of sour cream - not too much.

I know - that’s a little picky, but what can I say? I eat one thing at a time and I do not like my food to touch.

It looks to be a beautiful, sunny day in Big D with a high of 66. I have a few errands to run but then I think I will meet up with some friends a bit later and find a patio to sit on and perhaps enjoy some ranch water - my new beverage of choice. (Why am I just now discovering this beverage)?

Think of Ranch Water as a dressed-down margarita that's hard to mess up, because it's wildly uncomplicated. The three-ingredient drink calls only for tequila, lime juice (lots of it), and Topo Chico. It has to be Topo Chico, not just any random sparkling water-way more bubbles to every sip. This is a non-negotiable, just ask any Texan. You simply combine the trio, and you're set with the most crisp, cool, thirst-quenching porch cocktail ever.

Yesterday was quite the blur. I remember going to the hospital and having my plasma exchange. But after that, I think I slept on and off all day. I keep forgetting to ask them why that procedure wipes me out. As soon as I get there, I am too busy saying hello to everyone and being chatty while I get hooked up to the slurpee machine. And as the procedure begins I start to fade a bit. Oh well - one day, I will remember to ask before things get going.

...wear a mask when appropriate
...be kind and compassionate to one another
...dance/sing/laugh it out. It might not help but it sure as hell couldn't hurt.
